Jambalaya, barbequed shrimp and pork chops the size of your head are just some of the items you will find on the Acadia menu. All of New Orleans favorites are cooked fresh for you. How fresh you ask? Practically outta the Louisiana Bayou fresh. Every Sunday evening, Chef Adam heads out to the Portland Airport to pick up a large package of seafood that is flown across the country that same day so that Acadia can have fresh shrimp, crawfish and other delectables. Don't worry, the seafood is frozen fresh, and Chef Adam has secret techniques for keeping the fish fresh and tasting like it just came out of the ocean shortly before it arrives on your plate.
